In Santa Eulalia, inside Insotel Fenicia Prestige Suites & Spa, there's a table that has become one of the must-visit dining spots in Ibiza. It's called Sa Talassa, and it carries the signature of Álvaro Sanz, the first chef on the island to earn a Michelin star. Álvaro Sanz, Ibiza's first Michelin star
Trained at the cooking school of "El Cenador de Salvador" and shaped alongside great names of haute cuisine such as Santi Santamaria, Martín Berasategui, Juan Mari Arzak and Joël Robuchon, Álvaro Sanz worked in Michelin-starred restaurants in Italy, New York and Spain before settling in Ibiza in 2010, "captivated by the magic of the island, its light and its nature." Today his career includes a Michelin star, a Green Star and two Repsol Suns, and he leads Sa Talassa with a young team trained by him.
Mediterranean roots: cooking from land, sea and air
Sa Talassa's cuisine is rooted in tradition, honest in its treatment of produce and territory, drawing on land, sea and air as the pantries behind a dining experience designed for guests' enjoyment, always looking towards the Mediterranean.
The menu changes with the seasons and pays tribute to Ibizan produce: Gillardeau oysters, semi-raw mackerel escabeche with fennel and monkfish liver, creamy rice with scarlet shrimp and free-range chicken, wood-grilled matured beef chop with Périgord sauce, or an ajo blanco with coconut and ginger served with smoked sardine. Among the desserts, the café caleta tiramisu stands out, a reinterpretation of the Italian classic with Ibizan goat cheese and mascarpone.
A ritual for the senses
Sa Talassa also offers a special experience combining spa and dinner for 95 euros, designed to extend the evening and enjoy the hotel surroundings before sitting down to eat. The restaurant opens for dinner only, making the most of Santa Eulalia's nights to offer a dining experience from start to finish.
